
Smoked Haddock Soup
This is one of our regular meals and is often added to all depending what we’ve got in the house.
I don’t think we ever followed a recipe for this just made a leek and potato soups and added bits until we found a soup we loved.
It’s filling and warming, lots of veg and full of umami, especially if you bother to get the double cream and blend a bit of the soup to make it more Cullen Skink like.
ingredients
- 360g smoked haddock
- 3 teaspoons good stock powder
- 1 medium onion, minced
- 2 cloves garlic, minced
- 3 medium leeks, finely sliced
- good couple of grinds of black pepper
- handful of potatoes (sorry never measured this), cut into 1 inch chunks
- 2 small carrots, finely diced
- mixed dried herbs to taste
and if you want to make Cullen Skink type soup with this
- replace onion with a couple of shallots
- small tub of single cream
putting it all together
- poach the smoked haddock in a litre of water until just cooked, remove and heat the water to a boil and add the stock powder.
- saute the onions for several minutes until translucent bot not caramelised, add the garlic and black pepper and cook for a few more minutes.
- add the leeks and cook for a few minutes more until soft and add the carrots and potatoes, let heat through for a couple of minutes.
- add the stock and dried herbs and cook over medium heat until potatoes are just tender.
- then flake in the smoked haddock and heat through.
if you want to make the cullen skink type soup
- instead of the onions saute finely minced shallots
- at the end let it all cool for a bit and then blend about a third of the soup and add back to the pot, then add the single cream.
- heat through gently.
serve with some nice wholemeal or soda bread
